Dinner Is Ready: (Not My) Grannie Vi's Baked Potato Soup~

Oh. MY. Word.

The Best.

Kelli mentioned on her blog that she made Potato Soup, and listed this recipe. I HAD to make it-When it is six degrees celcius, you need something (!) to warm you up, and THIS was it!!!

Look how beautiful it turned out:
There is one thing I changed to the recipe~I chopped up one sweet onion* and added it to the butter to turn opaque before stirring in the flour. {Because, as we all know, you can NEVER have enough onions, and the green onions are great...just not enough for me!}

I Love you, Grannie Vi for creating this delicious, filling, warming potato soup! {And I don't even have a Grannie Vi!}

***Just So You Know: Everywhere in this post where I mention the soup, I am linking back to the original post to give credit to the Author of this soup and church friend of Grannie Vi. Click on the underlined areas to go directly to the blog for the recipe. For those of you {Mom!} who aren't sure what I am talking about, I am listing the recipe below with the author's permission:
grandma vi's baked potato soup4 large baking potatoes
2/3 c. butter
1/3 c. flour
6 c. milk
3/4 tsp. salt
1/2 tsp. pepper
4 green onions, chopped and divided
12 slices bacon, cooked, crumbled and divided
1 1/4 c. shredded cheddar cheese, divided
8 oz. sour cream *1 large sweet onion chopped

1. bake potatoes, let cool, peel and dice as finely as preferred; set aside.
2. melt butter in a heavy saucepan over low heat, (*add sweet onion and stir until opaque), add flour; stirring until smooth.
3. cook 1 minute, stirring constantly.
4. gradually add milk, cook over medium heat, stirring constantly, until mixture is thickened and bubbly. (*This seems to take a long time, but just be patient! It will thicken and get bubbly-I promise!)
5. add diced potato, salt, pepper, 2 T. green onions, 1/2 c. bacon, and 1 c. cheese. cook until thoroughly heated; stir in sour cream.
6. add extra milk, if necessary, for desired consistency. serve with remaining onion, bacon, and cheese sprinkled on top.

It's about 50 degrees warmer here, but that does sound good! Maybe I'll open the windows and try to talk my gang into cozying up to some soup. I like Shell's suggestion for bread bowls. YUM!

I am so bad! It's just so easy to open a tin of soup these days. I have printed this recipe and will keep it because potato based soups are my favorite. One day, when I have time to catch my breath, I WILL make this soup. Thanks for sharing the recipe.
