I'm on a Roll! A Chicken Casserole!!!

How about a DELICIOUS dish that even your kids will love?
{How about an artery clogging recipe?}
How about a warm meal for the winter months?
{How about you make your visit with the cardiologist after eating this??}
How About: Chicken Casserole~

Preheat your oven to 350 degrees.
Dice up two cups of cooked chicken breasts.
Place in a casserole dish.

Mix with the Chicken:
One can of Cream of Chicken soup, and
8 ounces of sour cream.

Take one Sleeve of Ritz Crackers and crush up, and spread over the top of the chicken/soup/sour cream mix.

{Don't tune out after this-Not the healthiest, but I promise, it tastes so good!}
Melt one stick {Yes, ONE STICK!!!} of butter and pour it evenly over the top of the crushed crackers:
Heat in the oven for 35-40 minutes, or until crust is browned, and sides are bubbling.
Then eat a little bit of heaven in the winter....
****
Pair with a green salad,
and a side of mashed potatoes.
****
My boys refused to eat this until I explained it was made with lots of butter (which they love-) and crackers (which they also love-) and the Chicken Casserole disappeared immediately!!!

I make this, too, but it's called Poppy Seed Chicken because you add 2 TBSP. to the mix...makes it taste doubly GOOD! Definitely a HUGE favorite of ours!

This sounds lovely and so easy to make. I have a box of ritz crackers that is asking to be crushed and made into this dish.
Thanks for sharing.

yummers! I make so many variations on the "chicken, sour cream, and chicken soup" casserole that there's never any reason to let leftover chicken go to waste. Try mixing in a cup of cooked rice, a handful of frozen broccoli and a cup of cheese. Oh, and of course the ritz and butter! It's ooey gooey and soooo comforting!

One of our faves, too. We add poppy seeds to ours as well. And I always serve with green beans. Yummy!
